Puerto Rican Sofrito Recipe!

Many people ask “What do you put in the beans that taste so good?” The main ingredient is SOFRITO! This recipe has been passed down from generation to generation and it remains as an iconic element to Puertorrican cuisine. You can use it to cook beans, rices, meat, chicken, and fish.

Sofrito puts the right subtle spice (not spicy) to any recipe!

Ingredients

2 green peppers,without sees, cut enlarge chunks (about 2 cups)

4 medium Spanish onions, cut into large chunks (about 2 cups)

3 head of garlic, peeled

25 fresh leaves of cilantro, washed and roughly chopped (about 1 1/2 cups)

25 fresh leaves of recao (culantro)*

1 spoon of salt

1/2 cup of achiote oil or virgin oil

* While culantro and ajices dulces are easy to pick up in my neighborhood, don’t sweat it if you can’t find them. The ajices dulces can be omitted, and just substitute another handful of cilantro if you can’t find culantro.

Directions

  1. Place all ingredients in a food processor fitted with a steel blade.
  2. With the motor running, add salt and oil one at a time through the feed tube and process until smooth.
  3. Process until your desire consistency. Depending how you like your vegetables in the food.
  4. Transfer to container and store in refrigerator for up to three days, or freeze.
